Fruit Kebabs with Chocolate Ganache
and Honey Sweetened Yogurt

- 1 1/2 cups halved strawberries
- 1 1/2 cups cubed pineapple (about 1 to 1 1/2-inches)
- 1/2 cup blackberries
- 1/2 cup slightly warm Chocolate Ganache, recipe follows
- 8 ounces Greek yogurt
- 1/4 cup honey
- 1 1/2 tablespoons freshly chopped mint leaves, plus more leaves, for garnish
- Special equipment: 8 (4-inch) wooden skewers
On each skewer, alternate strawberry, pineapple, strawberry, pineapple and blackberries. Place the skewers on a baking sheet. Using a squeeze bottle, drizzle with ganache. Combine yogurt, honey and fresh mint in a ramekin. Garnish with mint leaves. Dip kebabs in yogurt, for serving.

Chocolate Ganache:
- 1 cup heavy cream
- 1/4 cup sugar
- 10 ounces semisweet chocolate (pieces or chopped)
Bring heavy cream and sugar to boil in a small saucepan. Pour cream over chocolate and whisk until combined. It will keep for weeks in the refrigerator. Store the ganache in a squeeze bottle. Reheat by submerging squeeze bottle in very hot water. |
