Breakfast Sausage Meatball Sandwich

- 6 breakfast sausage links (turkey, pork, or beef)
- 1/4 cup spinach
- 2 garlic cloves
- Salt and freshly ground black pepper
- 1/4 cup bread crumbs
- 2 tablespoons olive oil
- 3 eggs, whisked
- 1 tablespoon butter
- 4 slices whole-wheat bread
- 1/4 cup grated Cheddar
Remove casing from breakfast sausage links. In a food processor, or blender, pulse spinach with garlic cloves. Incorporate spinach mixture into sausage. Season liberally with salt and pepper. Roll sausage into bite size meatballs and roll in bread crumbs.
Heat a medium sauté pan over medium-high heat. Add oil. Pan-fry meatballs until golden brown and cooked through, about 3 to 4 minutes. Remove and set aside.
In the same pan, add the whisked eggs and scramble; with a wide spatula, gently turn and flip the eggs over until they are cooked through and maintain a silky appearance.
Butter the bread and toast. Assemble meatball sandwich by layering scrambled eggs, cheese, and 3 meatballs per sandwich.
Yield: 2 sandwiches
